Founding Partner - Chotto Matte, Black Roe & Fucina
Kurt Zdesar kicked off his culinary career with stints at McDonald’s and Kentucky Fried Chicken but was soon overseeing Nobu’s first European location in London, which received a Michelin Star within 10 months. He’s brought all-day dim sum to London with his popular Ping Pong brand, launched Chotto Matte in Soho, Black Roe in Mayfair and he’s just opened a new Italian restaurant called Fucina. Moving forward in 2018, Kurt will see the international expansion of his brainchild Chotto Matte with branches opening in both Miami, Toronto and potential other locations around the world!
When talking about design excellence, simplicity is key; there should not be too many elements. The experience and offering must represent the design in a way that is both comfortable and engaging for the customer. It must remain relevant to the cuisine and create a distinctive ambiance that your guests will long for until they return. It harnesses the natural beauty of raw materials such as woods and stone and avoids man-made materials like plastic.
